When I first knew I was going to try to go vegan, I was a little scared at first. I didn’t quite know what to expect; no cheese, no white flour, no butter? It seemed like it eliminated so many of the simple things I already ate. So before I even went shopping I did some research, vegan cream cheese is a thing along with vegan pasta and who knew some of the things I already ate were vegan!? Bagels and salads and my favorite, POTATOES. My first shopping trip I stocked up veggies, fruits, and pastas. After a little experimenting I discovered veggie tacos, roasted potatoes, and mushroom pasta were my favorite vegan dishes and they took about 10 minutes to make. I can’t say I never got bored because I did some days, however over a month I know I have not tried all the vegan recipes out there. If all Hope was really lost, Del Taco and Carl’s Jr. now offer vegan options which isn’t healthy, but still always good in a pinch. After about 2 and half weeks in I was feeling less bloated, and wasn’t feeling as drained at the end of the day. By week 3 it was second nature to me and even after the month was over I still think that a veggie burrito with guacamole sounds better then a bacon, egg, and cheese one. Unfortunately now, I have gone back to eating dairy, and I can say I genuinely miss the feeling that living plant based gave me.
