Whether or not you are working, Monday always seems to be too far from Friday, and Friday too close to the following Monday. These fun recipes are here to help these weeks in solidarity seem a little more fast paced. Most of these drinks contain alcohol, so please enjoy responsibly!
1. Tropical Pineapple Juice:
1 cup of white rum
1/3 cup of Malibu Coconut Rum
1/2 cup + a splash of coconut water
1 3/4 cup of pineapple juice
5 tbsp of lime juice
2. Espresso Martini:
1 1/3 parts vodka
2/3 part Kahlua
2/3 part espresso
3 whole coffee beans (as garnish)
I like to add a little sugar or simple syrup if you like yourdrinks on the sweet side.
3. Honey Deuce:
1 1/4 oz of vodka
3 oz of fresh squeezed lemonade
1/2 oz Chambord or premium raspberry liquor
frozen honeydew melon bars for garnish
4. Whiskey Sour:
1 1/2 oz of whiskey
1 1/2 oz of fresh lemon juice
3/4 oz simple syrup
garnish: maraschino cherry or lemon peel
You can even add an egg white to the shaker which makes the texture silky, but of course you can leave it out if the egg is too much for your taste.
5. Virgin White Grape Spritzer:
1/2 cup of frozen green grapes
1/2 cup of frozen red grapes
1 thinly sliced orange
1 thinly sliced lemon
4 cups of chilled bottled ginger ale
4 cups of white grape juice
This is a clean, refreshing drink perfect for a day by the pool. You can share or add a little vodka and keep it all for yourself.
When I first knew I was going to try to go vegan, I was a little scared at first. I didn’t quite know what to expect; no cheese, no white flour, no butter? It seemed like it eliminated so many of the simple things I already ate. So before I even went shopping I did some research, vegan cream cheese is a thing along with vegan pasta and who knew some of the things I already ate were vegan!? Bagels and salads and my favorite, POTATOES. My first shopping trip I stocked up veggies, fruits, and pastas. After a little experimenting I discovered veggie tacos, roasted potatoes, and mushroom pasta were my favorite vegan dishes and they took about 10 minutes to make. I can’t say I never got bored because I did some days, however over a month I know I have not tried all the vegan recipes out there. If all Hope was really lost, Del Taco and Carl’s Jr. now offer vegan options which isn’t healthy, but still always good in a pinch. After about 2 and half weeks in I was feeling less bloated, and wasn’t feeling as drained at the end of the day. By week 3 it was second nature to me and even after the month was over I still think that a veggie burrito with guacamole sounds better then a bacon, egg, and cheese one. Unfortunately now, I have gone back to eating dairy, and I can say I genuinely miss the feeling that living plant based gave me.
As a lover of coffee and new things, anytime a new coffee shop opens around me, I make it a point to go and try a cup. My favorite drink has to be a vanilla latte, but these coffee shops have so much more to offer.
The reality is, nothing drastic happened at all. However, I think everyone should try and be a vegetarian at least once in their life. Maybe not for 90 days but at least a month. One surprising thing that I gained from going vegetarian is learning that my stomach is very sensitive to soy. One tempeh blt sandwich and I’m okay, but not in addition of a soy chorizo burrito for breakfast. Surprisingly, my vegan friend told me soy isn’t actually all that great for you either! This is something I never would have learned if I hadn’t cut out meat from my diet. But, for 90 days I got to go out and try new veggie based foods and I found out how much I genuinely enjoyed them! There are lots of foods that I now eat on a regular basis, that I never would of tried otherwise. There are days I don’t eat meat and I don’t even realize it.
Being a vegetarian isn’t for everyone, but adding more vegetables and fruits is! Not ready for the full month commitment? Try doing a Meatless Monday and add on from there. Here are a few of my favorite veggie based foods to start out with!

Extra: This might not be vegetable based but, the Veggie Burger at Fat Burger is better then the original!
